Cranberry Chicken Salad

Ingredients:
1 12.5 oz Can Chicken
1/4 C. sliced or slivered almonds (or any nut you prefer)
1/4 C. Cranberry Mustard Sauce (click here for recipe)[
1/4 C. dried cranberries

Directions:
Mix all ingredients together. Serve on whole grain bread or La Choy Chow Mein Noodles.

Grilled Peanut Butter Sandwiches

Ingredients

Peanut butter
Sliced bread
Butter
Chocolate chips (optional)

Bananas (optional)

Directions:
Spread peanut butter on one piece of bread and put another slice on top to make a sandwich. Butter the outsides and cook on skillet until golden brown. Flip and cook the other side.

Tuscan Caesar Chicken Wraps

Sprinkle 1.5 lbs chicken tenders with pepper and tuscan seasoning.


Grill until juices run clear (I used our George Foreman grill)


Spread Caesar Salad dressing thinly over one side of a flour tortilla (use between 4-5 tortillas for this recipe)


Lay lettuce leaf over the dressing, then thin tomato slices, cheese slices, 3 of the grilled chicken tenders, and bacon.


Roll up like a burrito and enjoy!

Ham & Mango Pita Pockets

Ingredients:
1/3 C. Sour cream
1/3 C. Mayonnaise
2 Tbsp minced fresh basil or 2 tsp. Dried basil
2 Tbsp minced chives or 2 tsp. Dried minced chives
1 Tbsp lemon juice
1/8 tsp salt
3 C. cubed fully cooked ham (about 1 lb)
2-3 medium mangoes, peeled, chopped and patted dry (about 2 cups)
6 whole wheat pita pockets

Directions:
In a large bowl, combine the first seven ingredients. Stir in the ham and mangoes. Spoon about 2/3 cup down the center of the tortilla; roll up tightly. Yield: 6 servings (with pita’s the yield is about 3 servings!)
